Special Edition Spicy Red Deer Salami
With our Special Edition Red Deer product line, we deviate somewhat from tradition in the spirit of innovation. We have created exceptionally high-meat content, pork-free gourmet products, in which we replace pork fat with cold-raised Water Buffalo fat, and which are made with traditional beechwood smoking and extended maturation.
Roebuck paprika salami
With our Roe Deer salami product line, we follow traditional Hungarian recipes and prepare healthy, wild game meat with pork belly bacon. This is why the aroma of premium spices, ground over liquid nitrogen, is even more intense.
The salami is well infused with smoke, and as it matures for a long time, the spices blend perfectly together. The seasoning and the bold flavors of the meat harmoniously come together and can be well appreciated during a meal.
The flavor of gray cattle from national parks is complex and offers an extraordinary gastronomic experience. It is reminiscent of a half-wild and half-beef steak, a true Hungarian specialty.
Red Deer meat, like Roebuck, is drier than Wild Boar, which gives this product its unique, distinctive texture and flavor.
The meat of Roebuck, similar to that of Red Deer, is drier than that of Wild Boar but more tender than that of Red Deer. In terms of taste, stronger gamey notes can be perceived, and its fat content is low.

Our products are made from the meat of wild animals that have been hunted. To ensure food safety, we use only a minimal amount of sodium nitrite (curing salt).
In fact, our 250-gram product, which includes a whole sausage or salami, contains only a small fraction of the deemed safe daily amount of sodium nitrite.
Specifically, instead of the typical 4.2-4.9 mg, our products contain only 1.075 mg of sodium nitrite. This means that our products are not only delicious but also safe for consumption.
We recommend slicing it thick enough to stand on its edge.
It does not require refrigeration, and we recommend storing it below 20°C. For the best cutting results, it is recommended to slice the salami at temperatures below 5°C.
The best flavor experience is achieved at room temperature. We particularly recommend pairing it with fresh sourdough bread, and hard cheeses such as Pecorino, Beaufort, Comte, and Manchego, but it can also be a defining ingredient in cold or hot gourmet dishes.
It can be enjoyed with fresh sourdough white bread, softer cheeses such as Camembert or Havarti, Tomme de Savoie, and a glass of blanc de blanc champagne, spicy white wine, or rosé.

After opening the package, or in case of any damage to the packaging, and to ensure that you get the best possible experience from our delicacies, we recommend that you store it in a cool (below 20°C), dry, and well-ventilated area (with humidity below 65%).
Our product is natural and free of chemicals, and while this means that it is more wholesome and delicious, it also means that it can be susceptible to molding.
If you do spot any molding, simply remove it with a dry, soft cloth and continue storing the product as previously recommended.
