Building on tradition, but reimagining it, in an effort to create a different taste experience, we have made some of our excellent, tried, and tested products even more special. Our 100% products are free from artificial additives, and with their exceptionally high meat content, we guarantee the highest quality. The character of the Grey Cattle meat, which is rich in minerals and carries herbal notes reminiscent of wild game, is unmistakable. The perfect combination of Hungarian spicy paprika and cumin gives the salami its body, which is made with traditional beechwood smoking and extended maturation. 100 g of the product is made using 167 g of dry Grey Cattle meat. This is because as the filling of the product undergoes the maturing process, a significant amount of water content is lost.
We prepare it with 8 weeks of maturation and meticulous care.
The product weighs 250 gramms.

TASTE EXPERIENCE

The salami is well permeated by the smoke, and because of its extended maturation time, the spices blend perfectly. The seasoning and the characteristic flavors of the meat are harmonious and can be felt during the meal. The taste of Grey Cattle from the national parks is complex and an extraordinary gastronomic experience. Half game and half beef steak, it is a true Hungaricum.

PRODUCT DETAILS

Our products are made from the meat of wild animals that have been hunted. To ensure food safety, we use only a minimal amount of sodium nitrite (curing salt).

In fact, our 250-gram product, which includes a whole sausage or salami, contains only a small fraction of the deemed safe daily amount of sodium nitrite.

Specifically, instead of the typical 4.2-4.9 mg, our products contain only 1.075 mg of sodium nitrite. This means that our products are not only delicious but also safe for consumption.

SERVING

We recommend slicing it so thick that it stands on its edge. It does not require refrigeration, storage is recommended below 20ºC, and the best cuts are achieved at 5ºC when slicing. The best taste experience is at room temperature. When cut, it has a duller, brownish color compared to a product containing nitrite, but this is due to the fact that it contains no preservatives. We particularly recommend it with fresh white sourdough bread, harder cheeses such as Pecorino, Beaufort, Comte, Manchego, but it can also be a key ingredient in cold or cooked gourmet dishes. You can try it with a glass of blanc de noir champagne, or a lighter or fuller-bodied red wine to find the perfect harmony.

STORAGE

Each of our delicious hind-legs is carefully stored in its own unique white leather bag, complete with a labeled number for easy tracking.

To ensure the freshest and highest quality meat possible, we cover it with vacuum foil, keeping it moist, tender, and full of flavor until you're ready to enjoy it

After opening the package, or in case of any damage to the packaging, and to ensure that you get the best possible experience from our delicacies, we recommend that you store it in a cool (below 20°C), dry, and well-ventilated area (with humidity below 65%).

Our product is natural and free of chemicals, and while this means that it is more wholesome and delicious, it also means that it can be susceptible to molding.

If you do spot any molding, simply remove it with a dry, soft cloth and continue storing the product as previously recommended.

Please be aware that weight loss is a possibility after opening the package.
